Tawanda Meats – Know Your Producer

OUR BEEF

Tawanda Farms maintains small herd of Murray-Grey cattle. This is a beautifully gentle breed developed to produce quality beef from grass alone. We have one sire who travels with his family year round – the way a herd would keep itself in nature.

 

Our 30 brood cows are excellent mothers and very in age from 3 years to, at this writing, 12 years of age.  These mothers are allowed to wean their calves themselves.  Thus, they are a happy, calm group. 

Our cattle receive yearly vaccinations against beef diseases but do not receive maintenance antibiotics. Our cattle's yearly food intake follows the grass cycle: from April to October they move through grass-legume fields and self-select their food. As the grass stops growing and goes into its rest period – November through March – the cattle are fed our stored hay grown on a harvested field here at the farm. This hay does not receive pesticides either.

The butcher beef are steers taken at 18 to 24 months of age. This beef is dry-aged for 21 days to maximize tenderness.  This dry-aging is very old-fashioned. 

Most beef in the grocery stores is “aged” in the box.  Our USDA facility has been very cooperative in using the dry-aging method.
